TTR – Coconut Milk


As many of you know, I’m almost done with my 28 Day Break Free Plan (I’ve been bad about blogging), but I’ve lost weight, feel great, have clear skin, and (can I just brag for a minute?) have amazing digestion, from stem to stern (if you know what I mean-wink!)

Coconut milk has been my new beverage of choice to add to my smoothies (and if you’re doing the 28 Day Break Free Plan too, you’ll understand) so I wanted to tell you a little bit about this fabulous food.

First off, it’s fatty. Love that! But good fatty. It’s full of short and medium chained fatty acids which get used, not stored unlike long chained fatty acids. Medium chain fatty acids aid in weight loss folks, yee haw! Also, lauric acid (a MCFA) is anti-fungal, anti-viral, anti-bacterial and anti-microbial. That means it’s going to help you fight the bad guys in your body, boost your good guys in your gut and give you great energy. Love that!

Here’s today’s TRICK:

Open the can UPSIDE DOWN! The fat rises to the top; so if you shake it and open it upside down, it will be better mixed when you open it.

Here’s a TIP:

Add it coffee instead of creamer. Use the full fat variety for a little tropical flavor.

And your RECIPE:

My New Smoothie

1 cup mixed organic berries
1/4 cup coconut milk
1 teaspoon local honey (great for fighting allergies)
1 scoop protein powder
water as needed

Let ‘er rip! Makes one big old smoothie. Very satisfying, very filling. Love, love LOVE coconut milk!

    Tried this today with frozen blueberries, frozen dark red cherries and half a banana and it was delicious. Had just finished a nice long bike ride and this was a spectacular reward! Thanks for the idea.

    Could you please tell me what kind of protein powder you use? I am trying to find one that isn’t gritty or taste bad and it’s hard to “try” it when the powders sell for $18 each – what if it’s yucky? And, I need it to be dairy free as I can’t do milk. Help!

    Jeannie – I got my protein from the health food store but it does have whey which is dairy. I was in the health food store today and saw several that were dairy free. Some egg based and some soy and other plants. I have not tried those but there were also single packs available for most kinds so you could sample a few and see which you like. Hope that helps. Oh and in this smoothie you barely taste /notice the flavor of the protein as the fruit and coconut milk make it tasty. I used a vanilla flavored powder.

    Jeannie, I am like you, very picky about protein powders. I have found “Muscle Milk” to be awesome. I also like the orange creme flavor…tastes like one of those orange 50/50 bars we ate as kids. But the vanilla works perfectly to add lots of fruit and goodies to.

    I have found that coconot milk is great in soups that normally require chicken stock or chicken broth. You can use the coconut milk to replace the broth portion of the recipe. Enjoy!

    I have Jay Robb Brown Rice Protein powder in Vanilla flavor. Got it at Kroger. I looked around and it was the cleanest brand I could find (no sucralose, etc, etc) for a reasonable price. I’ve thrown it in smoothies and pancakes with no complaint from the family. It doesn’t seem gritty, but I haven’t tried many protein powders.

    I’ve been using Almond milk for everything lately, as it tastes more like regular milk to me. But I’ve never thought of using coconut milk in my coffee! Thanks for the idea!
