Instructions
  1. In a large serving bowl, toss together arugula and kale; place chopped cucumber on top, in one section then do the same with the peaches, shrimp, bacon, eggs and bell pepper.
  2. Set the bowl aside.
  3. In a medium bowl, smash together remaining ingredients (avocados through hot sauce) until smooth; drizzle this mixture over the salad and serve.

DO-AHEAD TIP: Prepare shrimp, bacon and eggs

SERVING SUGGESTION: Add stir-fried yellow squash and snow peas tossed in a little coconut oil and chopped flat leaf parsley.

  1. While chicken is cooking, prepare Glaze.
  2. Combine 1 cup fresh minced lychees, 1/2 cup white port wine and lemon zest from one medium sized lemon in a small saucepan.
  3. Cook over low heat about 5 minutes or until glaze is slightly thick.
Chicken
  1. Preheat oven to 400 F.
  2. Sprinkle chicken with salt and pepper.
  3. Place chicken, skin side up, in a single layer in a shallow baking dish; brush chicken with butter.
  4. Roast, about 45 minutes or until chicken is tender.
  5. Drain off fat.
  6. Add lemon slices to the top of the chicken, spoon glaze over chicken and lemon.
  7. Bake 3 additional minutes.
