
Red Cabbage Slaw

Ingredients
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 teaspoons celery seed
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 head red cabbage cut into 1 1/2 –inch chunks
- 2 small carrots grated
- 1 large shallot diced

Instructions
- Combine first 6 ingredients (apple cider vinegar through black pepper) in a large bowl; whisk until well blended.
- Toss in cabbage, grated carrots and shallots; coat well. Cover and refrigerate for at least 1 hour.
