  1. In a large stock pot, place the chicken feet and backs, add water, turn the heat to high and bring to a boil.
  2. Add onions, celery, carrots, rosemary, oregano, thyme, salt and apple cider vinegar.
  3. Leave uncovered, and continue simmering for 3–4 hours, adding additional water, 1 cup at a time, if needed.
  4. Strain and cool the broth completely, uncovered, discarding all bones, vegetables and herbs.
Recipe Notes

Again, this whole thing can be done in a very large slow cooker and cooked up to 2 days on low.

*To roast, preheat oven to 350 degrees, drizzle olive oil over the chicken parts and liberally sprinkle with sea salt and pepper.

  1. Season the beef with salt and pepper, thyme and parsley.
  2. Heat 2 tablespoons coconut oil in a large skillet over high heat.
  3. Sear beef for 2 minutes on each side then place in a large crock cooker. In a medium bowl mix the next 4 ingredients (garlic through broth).
  4. Pour sauce over the beef and cover.
  5. Cook on LOW for 5 to 8 hours, until beef is very tender and light pink in the center. Let cool for 15 minutes.
  6. Preheat oven to 450 degrees.
  7. In a large bowl toss the kale, collards and bacon with the remaining coconut oil and salt and pepper to taste.
  8. Pour greens onto a rimmed baking sheet and cook for 10 to 15 minutes, until leaves are crispy, stirring occasionally.
  9. Shred beef with two forks and serve with crispy greens.

  1. Heat the olive oil in a large skillet with a tight-fitting lid over medium-high heat.
  2. Sprinkle chicken with salt and pepper; add to the skillet and brown on both sides.
  3. Add wine (or broth) and water to the skillet and sprinkle the chicken with cinnamon, cloves and nutmeg.
  4. Reduce skillet heat, cover and simmer 5 to 6 minutes or until chicken is cooked through.
  5. Serve chicken topped with pan sauce.
