Grilled Salmon with Mango Salsa

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large mango peeled, pitted, chopped
  • 1/2 medium red onion diced
  • 1 red bell pepper seeded and chopped
  • 1 small jalapano seeded and chopped
  • 2 teaspoons freshly grated ginger
  • 1 lime juiced
  • 1/2 cup chopped fresh cilantro
  • 1 avocado peeled, pitted, chopped
  • sea salt and freshly ground black pepper to taste
  • 1 tablespoon avocado oil
  • 6 6-ounce salmon steaks
  • 1 lemon juiced

Instructions
 

  • In a large bowl, add 2 tablespoons olive oil, mango, red onion, bell pepper, jalapeno pepper, ginger, lime juice, cilantro, avocado, sea salt, and freshly ground pepper to taste and stir to combine
  • On a large platter, add salmon, 1 tablespoon avocado oil and lemon juice.
  • On an indoor grill over medium heat, grill salmon 5 to 7 minutes each side until browned and fish flakes easily with fork.
