Pineapple-Mint Vinaigrette

Ingredients
  

  • 3 tablespoons pineapple juice
  • 1 1/2 tablespoons water
  • 2 tablespoons cider vinegar
  • 2 teaspoons chopped fresh mint
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cracked pepper
  • 1/4 cup extra virgin olive oil

Instructions
 

  • Mix all of the ingredients in a bowl whisking in oil last in small amounts until well blended.

Notes

Great on salads with Swiss chard as the main ingredient.
