In a large bowl, add pork, chile powder, coriander, oregano, garlic, lime juice and zest, 2 tablespoons olive oil and sea salt and freshly ground pepper to taste. Marinate in the refrigerator for 30 minutes.
On an indoor or outdoor grill, grill pork over medium high heat for 7 to 8 minutes each side until cooked through.
Serve grilled pork chops with watermelon salad.

In a large bowl add, lemon juice, watermelon, feta, olives, onion, mint and sea salt and freshly ground pepper to taste.
