Grilled Chile Pork Chops with Watermelon Feta Salad

Ingredients
PORK CHOPS:
- 6 pork chops
- 1 tablespoon chile powder
- 1 tablespoon coriander
- 1 teaspoon oregano
- 4 cloves garlic chopped
- Juice and zest of 2 limes
- 2 tablespoons olive oil
- Sea salt and freshly ground pepper to taste
WATERMELON SALAD:
- Juice of 1 lemon
- 6 cups watermelon cut into 1/2 inch cubes
- 1 cup feta cheese crumbled
- 1 cup kalamata pitted olives halved
- 1/2 small sweet onion diced
- 1 cup freshly chopped mint
- Sea salt and freshly ground pepper to taste
Instructions
PORK CHOPS:
- In a large bowl, add pork, chile powder, coriander, oregano, garlic, lime juice and zest, 2 tablespoons olive oil and sea salt and freshly ground pepper to taste. Marinate in the refrigerator for 30 minutes.
- On an indoor or outdoor grill, grill pork over medium high heat for 7 to 8 minutes each side until cooked through.
- Serve grilled pork chops with watermelon salad.
WATERMELON SALAD:
- In a large bowl add, lemon juice, watermelon, feta, olives, onion, mint and sea salt and freshly ground pepper to taste.
