beef stew meat
cut into 3/4-inch cubes

dried thyme

dried sage
Sea salt and freshly ground black pepper
to taste

low sodium beef broth
or use homemade

russet potatoes
peeled and cut into 3/4-inch cubes

cup
Guinness or dark beer
or substitute beef broth
Instructions
In a medium skillet, heat the olive oil over medium heat.
Add onion; saute for 5 minutes.
Add garlic, beef cubes, thyme, sage, salt, and pepper; saute for 5 minutes or until beef cubes have browned.
Transfer mixture to a slow cooker along with potatoes.
Pour beer (or broth) over the top.
Cover and cook on LOW for 8 hours.
