This week I visited the set of Charlotte Today and made one of my favorite pasta dishes: Gluten Free Pasta Carbonara!
Gluten Free Pasta Carbonara
- 2 tablespoons olive oil
- 4 ounces bacon diced
- 2 cloves garlic minced
- 3/4 cup half and half
- 1 cup grated Parmesan cheese
- sea salt and freshly ground pepper to taste
- 1 pound gluten free pasta cooked and 1/2 cup pasta water reserved
- In a large skillet, heat the oil over medium-high heat. Cook the bacon until crisp and then add in the garlic. Cook only a few seconds more and then stir in the cream and cheese. Season with the salt and pepper to taste and then add in as little or as much pasta water as desired to thin the sauce. Once the sauce reaches the desired consistency, fold in the cooked pasta and then serve.
