Spiced Baked Salmon
- 2 tablespoons olive oil
- juice and zest of 1 lime
- 2 tablespoons chopped cilantro
- 1/2 jalapeño chopped
- 1 clove garlic chopped
- sea salt and freshly ground black pepper to taste
- 2 pound salmon fillet
- Puree the oil, lime, juice and zest, cilantro, jalapeño and garlic in a food processor until smooth.
- Place the salmon on foil on a baking sheet. Pat dry and season with salt and pepper. Spread on the cilantro and lime mixture and bake in a preheated 400 degree oven for 15 minutes.
- Serve immediately.
