Today’s Focus is Coconut Oil

I love coconut oil. Just ask my family, I’ll use it for practically anything. I not only cook with it, I use it on my skin, even in my hair! Coconut oil has an amazing amount of benefits, including the fact that it is antibacterial, antiviral and antifungal as well, did you know that?

This incredible oil is capable of not just skin and hair care but also: bone strength, protection against diabetes and cancer, boosting the metabolism and immune system, it helps you to manage stress and is a great aid in weight loss as well. Thyroids love coconut oil and studies have shown it may have a positive effect on hypothyroidism. Can you believe that just one oil can be responsible for so much good?

The taste of coconut oil is slightly sweet and leaves a wonderful tropical aftertaste. It’s not overbearing in flavor and adds just the right amount to give your stir fry or sauteed veggies that bit of edge you were looking for, plus its high smoke point makes it a natural to saute in. You can even toss it into your popcorn instead of butter!

Here’s Your Tip

Coconut oil has more benefits than vegetable oil and olive oil. Honestly, it’s probably the best oil you could use. So my tip for you is to buy some and start using it instead of olive oil for sauteing!

Here’s Your Trick

Do you overprocess your hair with color or maybe burn it out with a flat iron or curling iron? Try saturating your hair for about a half hour with some coconut oil and you’ll notice a softer result. Same goes for your skin! Any dryness or irritation, just throw some coconut oil on it! Do you remember how in My Big Fat Greek Wedding they used Windex to fix everything? Coconut oil is my Windex, LOL.

And for Your Recipe

Veggie and Rice Stir Fry

2 tablespoons coconut oil
2 cloves garlic, pressed
1 small onion, chopped
1 green bell pepper, seeded and chopped
1 small zucchini, sliced
1 small crown steamed broccoli
3 cups cooked brown rice
1/2 teaspoon of cumin
1/2 teaspoon garlic powder
Sea salt and fresh ground pepper to taste

In a wok, or large skillet, over medium heat, melt coconut oil. Add garlic and the onion. After onion turns transparent, add the bell pepper, zucchini, and broccoli. After roughly 5 minutes add the rice and seasoning. Keep stirring over the heat for another 5 minutes and you’re done! Very easy and delicious!

  1. Coconut oil is my windex too, in fact I talk about it often enough my boyfriend teases me about it like the joke John Corbett makes in the movie.  Coconut oil is amazing!

  2. I’ve been using coconut oil and grapeseed oil to make mayo.  I tried coconut oil by itself first, but it hardened like butter in the fridge.  LOL.  I had butter mayo.  Anyway, now I use equal parts of both and don’t get a strong olive oil taste in my mayo.

  3. Never tried coconut oil, but I love coconut milk.  Its got a sweet crisp taste with a buttery texture that makes me swear it should be very very bad for me.
