I’m never without a great big jar of coconut oil. I use this magical, versatile, and healthful substance in everything from baked goods and stir-fries to smoothies and coffee. (But I admit that I also use coconut oil to soften my hair, remove my eye makeup, and I add it to my bath too!)

So, what’s so special about coconut oil?

Answer: Lots of things, but the main reason I use it is that it is such a healthy, all-purpose oil.

Let’s take a quick look at some of the health benefits of this marvelous oil:

• It has antiviral properties, so it keeps fungus and yeast at bay
• Coconut oil increases metabolism

• It has a healthy effect on hypothyroidism

Not only is coconut oil extremely healthy, but it has a very mild flavor and a lovely tropical aftertaste. I love the taste of coconut oil as much as I love how good it is for me!
